Amazon chilli sauces – from mellow mango to a proper kick

Amazon chilli sauces bring the flavour of chillies from Colombia’s Cauca Valley into the kitchen, along with a good dose of southern joie de vivre. There are three sauces of different character – from mild and fruity to one that makes it quite clear it is spicy!
The mango sauce is the gentlest choice: only 90 SHU, but a full 19% mango plus chilli and habanero pepper. The result is a fruity, lightly spicy sauce that can be used undiluted in salads, on pizza and with seafood. A good choice for those who love flavour but do not want a fire extinguisher next to their lunch.
The chipotle pepper sauce adds 600 SHU of smoky heat. The sauce contains 34% smoked chilli and goes with barbecue, marinades, soups, rice dishes, pizza, salads and seafood – a fairly universal character, in other words, not a bottle waiting in the fridge for the once-a-year Mexican night.
The red pepper sauce is the hottest of the trio: 3000 SHU and 27% red pepper. It suits spicy soups and rice dishes, seafood, and giving tomato sauce a proper boost. And you do seem to get used to chilli! The initial “oh-how-hot” soon gives way to “ah, this can be drizzled straight onto pizza too!”
Three sauces, three heat levels and one simple idea: good food does not have to be boring. The colourful bottles make that quite unambiguous even before they are opened.
